Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.

I’d do some kind of Rosewood with a similar end graft and mitered purfling. One nice thing about a dark wood is you can make the joints almost invisible.

Do it thin too, a little less than 1/4” overall with purfling.

Use the same wood for your headstock veneer and finish it off with a BZ bridge!

I would look for a binding that would kind of matches the end grain color of the curl on the back. I don't know what wood would do that. I doubt sapele will, maybe some pau ferro?
