I have finally gotten comfortable using hide glue. My first package that I've just finished came from Rockler, and the gram strength wasn't listed, but it was little pellets. I just ordered some from Highland Hardware (which I believe is from Milligan and Higgins), which was listed as hide glue at 192 gram. What I got is very fine pellets that is listed as rabbit skin glue. Searches on differences between the two just got me more confused (not a difficult task).

Does fine granules labeled as rabbit skin glue seem correct when ordering hide glue at 192 gram?

No, rabbit skin glue is not what you want, nor it seems what you ordered. Rabbit skin glue is used for making gesso and as a base for gilding and gold leaf. It's not a glue for wood working. I'd call the supplier.

I use rabbit skin glue all the time in instrument building and it works great. I have no idea though what gram strength I am using, my supplier's rabbit skin glue just works.
