I have a guitar (my first) that I experimented with a couple different finishes on. The top, sides, and neck came out fine, but the back looks terrible. I plan to sand the back back to the wood. I could bring it along in that state for an epoxy pore filling demo.

I also have other junker guitars (given to me by friends to practice repair on) in the shop that would be good subjects for neck resetting and/or other operations. I could sand the finish off the back of one of those as well for a finishing demo.

What Chris ... you don't like my rosettes? Well ... pfft (kidding, kidding ...)

I was thinking more along the lines of general applications of templates to rosette making, along with some basics, like how to manage multiple purfling lines, how to make use of empty Cuban tubes, etc.

These are copies of rosettes from a Turkish oud, which one of my client's wants in his commission. I got eight rosettes from this stack after slicing them on the bandsaw ... simple and efficient, and I have some for the next time a client wants Turkish oud rosettes. ;)

It may not qualify as a formal tutorial/demo, but I'd love for someone to show me how to sharpen-burnish-use cabinet scrapers.
