I've heard shellac is not absolutely clear, but actually casts a nice golden hue onto a piece of wood. So I'm wondering, if I wanted to dye a piece of wood blue, and use shellac as my top coat am I going to end up with a greenish guitar?

Depends...Plantina flakes are pretty clear. But garnet shellac is a deep reddish brown, Kusmi is a nice caramel color so it really depends on the shellac. It is a naturaul product after all.

Blue is a tough color as it doesn't take much yellow to give it a tint.

I do know that you can “decolorize” shellac by using carbon. I’ve done this to make it less tinted several times.
