Great tool. But I wish it had a smaller cutter. Thoughts? Something more suitable for smaller pegheads (mandolins?) Can I get a smaller version of that cutter?

You could use a W.L. Fuller four flute countersink and chisel the taper flat to give a square shoulder. Find a countersink without the set screw collar such as this type (or file off the collar of those that have it):

Look for counterbore's or type R counterbores.

Just asking, are any of these compatible with the stew-mac system? The rod diameter is my concern (and locking in to it). Nice if someone here has done that...

If it doesn't fit the SM shaft, you could just get some drill rod of the appropriate diameter to fit the counterbore.

The counterbores list the diameter of the center hole. You can use an extra long drill bit chucked into drill backwards or a drill rod as mentioned. Such as:
