What do y’all do to make sure your tubers get installed parallel with each other / w the side???

You can take your time and just eye it -- if you have a good sense of alignment/symmetry then this will likely be okay. However, I use a template. For example, my Rodgers tuners template, has the tuner hole and screw locations. I locate the template to the headstock with 2 10mm rods (the size of my tuner holes) and just drill all 12 holes. If you are using closed gear tuners then it's easy to tighten the tuners with the bushing and check the alignment before drilling the screw hole. For closed gear tuners, I just use my eyes but for open gear tuners, I've found templates are necessary for me to get everything to look symmetrical.

A 1/8" thick piece of hardwood works great for the templates or you could use plexiglass as well - punching a center on plexiglass is quite easy and so it isn't too hard to get very accurate templates.

I put a ruler across the top both tuners....

It is a little difficult getting the tuners aligned, especially if the head stock has curved sides in the tuner area. I basically draw the center line on the back of the head with a pencil, then using a couple of triangles, draw lines perpendicular to the center line representing the center and top of each tuner. (center is the middle of the bore). Drill tuner peg hole and then use the top line to eyeball the angle you want. Tighten them down if they have nuts and drill the screw holes.

I don't make mine parallel/square to the edge of the headstock, I make them square to the centreline.

To do so, as mentioned above, you just take a straight edge along the back of each pair of tuners and adjust accordingly. Works on the 510's by getting a longer stick, turning the knobs straight up and down, and doing the same thing...
