I don't see an advantage to passing the wood instead of the plane. In fact, he has to stop mid pass and adjust his hand positions, then restart the pass. That could result in slight inaccuracies. I use a #7 with a normal shooting board and I get full length plane shavings. More than one way to skin this cat.

Pretty common in the multi wedge bowl back mando/oud world to vise the plane and move the wood rather than figure out how to vise a tapered sliver…
